Delicious bars with a creamy chocolate spread -




About this dish

I'm going to start rolling out a few bar recipes, that don't contain oats.

I feel like we need more recipes that expand beyond beautiful oats.

This one is so so super delicious and is creamy, nutty, sweet and earthy.

This is a perfect snack to create and keep in the freezer, to pick on throughout the week. Good-luck not eating it all at once (:

Dreamy Power BARS

Servings: 12 medium bars - 20 small bars

Ingredients
  • 1 cup Almonds

  • 1 cup Cashews

  • 1 cup Walnut

  • 1/2 cup Pepitas

  • 10 creamy Dates, pits removed

  • 1/2 cup Nut/Seed Butter of choice (I use Peanut Butter, Cashew and Sunflower most often)

  • 3/4 tbsp Salt

  • 1/4 cup Coconut Butter

  • 1/2 cup Cacao Powder

  • (optional) 1-2 tbsp Sweetner of choice - I use local honey

  • 1/3 cup Plant Milk - I use soy

garnish with

- Pistachio bits

- Goji Berries

- Coconut Flakes



Recipe
  • In a food processor - add almonds, cashews, walnuts & pepitas

  • pulse a few seconds, they don't need to be processed super fine (unless thats how you like them!) - I prefer them rough processed, some pieces large and some smaller

  • then, add the dates, nut butter and salt

  • pulse process until the dates are broken down and the nut butter has meshed in with the rest of the ingredients, binding them together lightly

  • grab a tray/flat plate that fits in and is safe to use in the freezer

  • layer it with parchment paper and pile the crumble to the center, ready for working with your hands

  • mold the crumble, pressing with your palms - to create a rectangular shape that is about 3/4 - 1 inch thick

  • then, make the chocolate spread

  • into a bowl add together the coconut butter, cacao powder, plant milk and optional sweetener - whisk to combine *

  • spread the chocolate across the top of the whole bar

  • garnish with pistachios, goji berries and coconut flakes

  • place uncover/ covered in freezer for a few hours

  • ready to eat!

NOTES

-we're in Texas, so the coconut butter keeps a bit fluid in our pantry. if your coconut butter is solid, just lightly heat a pot, remove from heat and toss in your coconut butter to melt softly (not burning it!)

-alternatively; you could heat some water in a pot, remove from heat and place the coconut butter canister in the water to warm the inner contents - for easier spreading

-keep and store in the freezer until ready to eat

-I believe these bars could last a long time in the freezer, we wouldn't know at the moment - as they're gone in a few days!
