Like my grandmother made them





About this dish

This dish is a classic. I've eaten many takes on Greek Potatoes & I love them all.

My recipe is inspired by my grandmother, who lived in Greece for much of her life. She created some of the most beautiful dishes I've ever had. Through her home cooking; I was exposed to a cuisine that became a heart beat of my diet. The Mediterranean diet has been a part of my life since I was very little.

GREEK LEMON POTATOES

Servings: 6-8



Ingredients
  • About 1200 g golden potatoes, skins removed and cut lengthwise and then into 4-6 pieces

  • 1 ½ tbsp mustard

  • 1 lemon juice, juiced

  • a ¼ - ⅓ cup olive oil

  • 5 garlic, small chopped

  • 1 tsp salt

  • 1 tsp pepper

  • 1 plant-based bouillon cube - i like this one here

  • 1-2 tbsp dried oregano

  • 1 ½ cups water

Recipe
  • preheat oven to 390 degrees

  • In a large bakeware dish (casserole dish, preferably with a lid/cover) add all ingredients and mix together

  • cover with a lid/ over safe covering and place in the oven for 1 hour - 1 ½ hours

  • you want to remove them from the oven when they can be pierced with a fork and have a beautiful golden color thats made its way to the inside/middle of the potato- cut one in half to check!

  • (optional) remove from oven, uncover them, sprinkle with a touch of cumin and paprika

  • pop them back into the oven to cook for 15-30 more minutes to firm up the outside (to your preference)

  • then remove them from the oven and sprinkle with additional oregano, if you like

  • ready to serve warm and delicious!

NOTES

- For this recipe I use Golden Yukon Potatoes
